Sun, wind and stunning skies at night

Everything got a good soaking with rain and the tanks are full again. Now it’s hot and windy and we didn’t last long at the beach although the dogs were unbothered and we watched a wonderful kite surf display on the waves.

I have been really enjoying cooking and making the most of seasonal produce so thought I would share recipes over the next few posts.

First melon

Melon Compote: This works well when you you pick or buy a melon that isn’t quite ripe or not very tasty. Ingredients: a small to medium sized gold or green fleshed melon (chopped up into smallish pieces), a good dollop of runny honey or vanilla syrup, juice of one orange. You can extra fruit like a few fresh berries or some yellow fleshed plums or a couple of apricots.

Directions: Mix it all up well and put in the fridge for a couple of hours. If it is still a bit bland add some finely chopped lemon verbena or lemon grass. Serve at room temperature with thickened yogurt and decorate with edible flowers.
