Every time I do a stint of serious weeding in the bush ( I try to do about an hour and a half most days) I am amazed and delighted by how strongly the understory is regenerating after degradation by cattle and possums. There are so many tiny ferns and seedings emerging. When I get depressed by my ongoing war with Mexican Devilweed I try to reassure myself that every weed out makes a space for another native.

Lemon coconut flan has become my go to favourite for an easy desert in a hurry when we want a delicious treat. Just put the following ingredients in the blender or mix with a hand mixer and bake for about 50 mins. at 170C.

1 heaped tablespoon lemon zest, 5 tablespoons lemon juice, 1 cup sugar or honey, 4 eggs, 1 cup coconut ( fresh, desiccated, thread), 1 1/2 cups cream/coconut cream/yogurt, 1/2 flour, 125g very soft or melted butter, 1/2 tsp vanilla. Serve with whipped cream, yogurt and/or berries.
