Perfect beach for us and dogs, nobody else there and warm shallow water as the tide was right out.

And on the home front a bit more weeding and collecting poo for the compost. As I did another big water and I noticed lots of monarch butterflies searching for swan plants which I haven’t managed to establish yet. They seem to love anything blue.

The bumble bees adore the flowers of any of the cucurbits. I can see that courgette and cherry tomatoes will be on the menu tomorrow.

We are going to go for picnic after a kayak later so I re purposed yesterday’s cake with lemon curd and creme fraiche topping which I think will be delicious.

And the secret ingredient in the smoked salmon and corn frittata is homemade pesto with big leafed basil.

I have found the best way to deal with corn which is a bit dodgy is to soak it well, microwave for 3 or 4 minutes and take it off the cob before using. The bottom layer of the frittata is pureed corn with salt, black pepper, cream and an egg to bind it. Then bake briefly before adding the rest of the mixture. I top with panko crumbs and a bit of grated cheese if it seems too sloppy.
