The plumbing job is done. The hand basin in the laundry now has taps and works and we have a freezer! No more searching for things I’m sure I’ve got and then finding them when searching for something else. I will never have a chest freezer again.

Today’s recipe is for a delicious blueberry and citrus cake.

Ingredients:150gm softened butter,1/2 cup of sugar, dollop of honey, 1tsp vanilla and 1 tsp almond essence, zest of 1 lemon and 1/2 an orange, 3 eggs, 1/2 cup milk and lge tblsp yogurt, 1 cup plain flour, 1/2 cup ground almonds, 1/2 cup almond meal, (or 1 cup of either), rounded-tsp bp and rounded 1/2 tsp b soda, pinch of salt, 1 cup blueberries. Directions: mix zest with sugar, cream with soft butter, add essence, then beat in eggs, add liquids and soda and mix well, sift in flour and bp and salt, fold in almond meal, then blueberries. Bake at 180 for about 45 mins. Drizzle with limoncello or ice with cream cheese or lemon icing when cool or serve warm with yogurt or whipped cream and more blueberries.
