These are for my friend Robin who is a big fan of No Ugly health drinks. So I thought I would see if I could create a delicious meal using them as inspiration.
First invite tour guests. We had 10 people so we could all ait around the table. I reckon 12 is maximum for ease. Ask someone to make desert and someone else who has a great garden to bring salad. Plan time to walk dogs, arrange flowers and have shower before folk arrive.
Stuffed duck eggs with smoked tuna and No Ugly ‘Immunity’

Hard boil 6 duck eggs, they take bit longer to cook and can be a challenge to peel. Halve and arrange whites on a platter. Great opportunity to use an egg plate if you have one.

Put yolks in mixing bowl and moisten with No Ugly Immunity until you can mash the yolks to a smooth paste. Now you can add things like mustard mayo, horseradish sauce and smoked tuna or other chopped/flaked smoked fish to make a tasty filling.
Gently use two teaspoons to fill eggs and put in fridge. Just before serving sprinkle with some dukkah or finely chopped parsley. You could put some celery sticks on the plate too. Don’t drink the rest of the No Ugly, you’ll need it for the beetroot dish.
Chilled tomato and roast pepper soup

Blend 1 jar of drained roasted red peppers, 2 cans crushed tomatoes, 1 litre tomato juice, juice of 1 large lemon and 1 bottle of No Ugly ‘Gut’. Add a good splash each of Worcester Sauce, Tabasco, balsamic vinegar and salt and pepper to taste. Chill well. It’s a bit like a soupy Bloody Mary so you can serve with vodka and extra tabasco for those who like it hot. Garnish with sour cream and and dried tomato pesto. Garlic bread made with rye bread and chipotle butter goes well with this soup and a glass of No Ugly ‘Gut’ on the side.
For the main course nothing beats roast lamb. it is really worth going to a good butcher and choosing two small roasts about 750gm each. Make sure they are at room temperature before roasting at about 160 to 180 for about 45 mins with a little oil, a few sprigs of rosemary and a splash of red wine half way through cooking.You can check when they are cooked by poking a skewer in and seeing what colour the juice is. Rest for at least 10 mins. And slice very thinly onto a hot serving dish.
The gravy is made by using a bottle of No Ugly ‘Hydrate’ instead of stock and adding a good splash of mint sauce, thicken the pan juices with some flour, add liquid and bring to boil until thick. Remember to warm the jug.
I made smashed roast potatoes with green pesto, celery polenta and No Ugly beetroot noodles.

For the beetroot, cook the beetroot noodles in the rest of the No Ugly ‘Immunity ‘ that you saved, for about 3 mins. Drain and save cooking liquid. Boil hard until reduced by half. Stir in beetroot with a knob of blue cheese and a small carton of sour cream. Reheat before serving with roasted chopped walnuts.
For the polenta I used No Ugly ‘Detox’ instead of stock and it worked really well. I just made far too much, dinner for tonight all sorted.
Next time I’ll use the ‘Focus’ and ‘Sleep’ invent a jelly and red fruit compote recipe. What fun!
