Where’s that possum?

Mr. Brock was convinced there was a possum in the huge puriri tree, he was probably right. Clary went to have a look while I weeded the bank.

It was idyllic weeding in the shady bush for a couple of hours and a break from the wind and dust up by the house.

Thought I saw a fish!

And dogs were very happy!

A long drink and some mud, what could be better!

Yesterday’s dud biscuits turned into a delicious crumble for dinner.

And I made a batch of biscuits using a foolproof recipe with variations.

Walnut coffee cookies

150gm really soft butter

1/2 cup soft brown sugar

1 cup self raising flour

3/4 cup of chopped salted roasted peanuts or dry roasted almonds or baked/toasted walnuts

Zest of orange or lemon, optional

Heat oven to 180C fanbake, line a tray with baking paper. Mix all together and use 2 teaspoons to make biscuits, press down gently. Bake for about 10 minutes. Let cool on tray to crisp up. They will spread. Makes about 20. Easy to doubles quantities for school holidays and builders.
